Jane Grigson wrote the fundamental overview of charcuterie, and, under her influence, Fergus Henderson shared a handful of incredibly delicious recipes out of the charcuterie tradition. Filling the gap between them, as I see it, is Michael Ruhlman and Brian Polcyn's Charcuterie, an excellent, balanced, enthusiastic cookbook that steers home cooks into the fundamentals of meat preparations. The book is encouraging evidence that a significant number of Americans have awakened to the pleasures of well-prepared meat. This isn't a fringe publication: it is a beautifully-designed, well-written, premium production. And it's about time.
This book does something fundamentally right: it completely eschews the Joy of Cooking model of everything-under-one-roof cookbooks. It assumes that the reader has focused interests and is dedicated to food. It acknowledges that the food trades were [and sometimes still are] highly technical, and best performed by specialists. Though we might as well give up the possibility of becoming first-class charcutiers unless we're willing to give up our careers and pursue it full-time, we can find some real satisfaction in a book like this. It presents, in a clear, well-organized, concise format, the wisdom of a great charcutier, explained by a great writer. That wisdom, those years of experience, is evident in the clearest way once you begin using this book: the recipes are easy to follow, well-suited to the home kitchen, and, happily, result in meat products that are better than anything you can buy in an American supermarket. Far better. Even the more daunting preparations, the ones involving aging and cold-smoking, for example, prove to be remarkably accessible and easy. Some will take more space than you or I have in the kitchen, but there are many recipes that produce amazing food with surprisingly little effort. The beef Chicago-style hot dogs are pretty quick once you have everything lined up, and they are so much better than store-bought dogs that you will hardly believe the difference. Some other recipes require more elaborate set-ups, even dedicated smokers and dedicated meat grinders, but there is plenty here that's accessible to the average home cook with the average kitchen. The biggest challenge, as usual, is finding the right cuts of meat to do these recipes justice. Count on making substitutions, and hope that some young person finds this book in time to begin his apprenticeship to the likes of Brian Polcyn, and returns to open shop in your neighborhood. Have the cardiologist over to dinner. Live a little.

This is probably the most complete, detailed book available on smoking food. It's not a barbecue book, it's a smoking book. Written by Warren Anderson, a food enthusiast and long-time food smoker, It covers both cold and hot smoking and includes detailed instructions for building your own smoker, or using commercial smokers. Warren shares everything he has learned through years of smoking food. A chapter covers smoking woods, where to get them and the characteristics of different types of woods. The chapter on cures and marinades covers brines, dry and wet cures, and marinades. Detailed recipes and instructions are included for making smoked bacon, ham, pastrami, jerky, cheese, turkey, fish, shellfish, sausage, nuts, and even smoked Peking duck. It's interesting that the Publisher's Weekly review is critical of the book for being TOO detailed. According to Publisher's Weekly, the descriptions and techniques "read like a technical manual, although Cook's Illustrated fans might welcome the excruciating detail. Though directed toward nonprofessionals, this book isn't likely to please armchair chefs." So, if you are an "armchair chef", this book may not be for you, but as Publisher's Weekly says "for those who plan to make a habit of smoking food, Anderson delivers". If you are serious about smoked food then this book is for you.

I love that author Karen Solomon considers her new cookbook, Jam it, Pickle it, Cure it, to be a handbook for kitchen food crafting. I often lament the fact that I'm not crafty in the traditional sense. Knitting gives me anxiety, painting makes me angry, and God forbid I try to sew anything, but I certainly know how to use my KitchenAid mixer and with this book as a guide I may yet find my very own alternative craft niche in the world.
While paging through the cozily styled recipes in this book I found myself hard pressed to find a project that I didn't want to try. Homemade Apple Butter - bring it on! Pickled Green Beans - when does the farmer's market open?! And if I have two weeks to spare I can even make my own bacon. Perhaps the item I'm most excited to try my hand at is Strawberry Jam. I'm honestly not sure if I can contain my excitement until June when the strawberries will be at their peak of juiciness in New England.
All of the recipes have thorough and thoughtful instructions. This cookbook will absolutely not disappoint and would make a wonderful gift.

This book was written with a distinct Euro flavor, and specifically does not cover salt cure for preservation. Unfortunately, this was why I bought the book. If you're looking for methods of preservation, don't buy it. If you're looking for how to make kippers or kinnan salmon, fine. I found nothing useful to an American looking to learn the old ways of salt/brine cure and smoking for quality preservation.

This is just a lovely primer on making things from scratch that are normally convenience or grocery store purchases. Because they are made from scratch, they combine unexpected flavors for gourmet goodies that would make wonderful gifts.
The photography of the colorful food is gorgeously photographed. The recipes and techniques are well explained. It's separated into clear chapters by type of food and well indexed at the back as well the table of contents in the beginning.
I was going to do a chapter by chapter breakdown, but there are a lot of chapters with a few recipes in each one. This book covers a lot of cook-ahead things for stocking your fridge, freezer and pantry.
Highlights for me include instructions for making your own masa harina and your own hot dogs with more information on how to turn those two things into corn dogs completely made from scratch. A wonderful curry powder recipe, corned beef and how to smoke your homemade corned beef to make pastrami, how to roast coffee beans in a heavy skillet, homemade chocolate/hazelnut spread, and how to make different kinds of non-dairy milk including a recipe for horchata. With some homemade sodas and icy sweet treats this book is just great. The sodas are yeast carbonated which is one of my favorite ways to make soda pop.
It's easy and inspiring. My daughter has pages marked for recipes she wants to try. A wonderful cookbook for people who are really getting into making things themselves and the DIY lifestyle.

The part about drying food was good and well balanced. The pickling section is only about pickling fish. Not a cucumber in sight. The smoking section has good background, but 90% of the recipes are for smoked fish. There are four of five pages devoted to non-fish items (birds, red meat, cheese, eggs, etc.) The jerkey section was good, and had many ways of making strip jerkey.
If you're buying this for the drying or jerkey sections, it's a good book. If you're buying this for the pickling section and hope to make vegetable pickles, look elsewhere. If you're buying this to smoke anything other than fish, there are better books out there, like Meat Smoking and Smokehouse Design by Stanley Marianski. If you're really into fish - dried, pickled, or smoked, this book is perfect.

There are plenty of helpful tips, and handy charts indicating how long a product should be heated per pound (with time adjustments when cooking at altitude). The recipes in the book are massive. Most require 100lb of meat, pounds of salt, and gallons of water; a few handful of recipes call for 3-10 pounds of meat.

I had recently the pleasant plessure of reading a new book. Meat Smoking and Ssmokehouse Design by Stanley Marianski, impressed me before I was halfway trough the book. The information is written in a clear to understand and follow language. The information is firstclass and accurate. There are so many books on the market about meat processing, making sausages and many other meat related subjects that it is a real pleasure to see once in a great while a book of this sort actually worth reading and gaining knowledge from it.
As a certified Master Butcher I have no hesitation to recommend this superbly written and illustrated book to anyone interested in making sausages, curing and smoking meats. Regardless if you are beginner or a professional, this book should be on your bookshelf. In fact I would venture to say that this book should be required reading material on butcher trade schools too.

Most books on smoking just give some elementary information and then are filled with recipes; this book is the reverse, scholarly information and theory as it applies to smoking meats and a few recipes that will get one started. While various recipes usually get the spotlight, it is the authors' opinion that the technical know-how behind preparing meats and sausages is far more important. There is a section with some basic recipes, but after reading the book one should be able to create his own recipes without much effort. The book explains differences between grilling, barbecuing and smoking. The sections on smokehouse design include over 200 construction diagrams and photos that cover most known methods: masonry, portable, wood, concrete, and drum smokers. After reading this book a reader will fully comprehend what can be expected of any particular smoker and how to build one that will conform to his individual needs. The book will benefit the serious smoker as well as the beginner.
